Nicola Burton from Hartwell House & Spa won the AA Housekeeper of the Year Award 2023. Independent Hotel Show collaborated with our partner AA Media in an interview with Hartwell House & Spa, one of England's stately homes just 40 miles north west of London, set in over 90 acres of gardens and parkland designed by a contemporary of Capability Brown.
Can you tell us a little about the history of Hartwell House & Spa?
Hartwell House & Spa is a historic country house hotel with roots dating back to the 17th century. It has been a royal residence for King Louis 18th, exiled King of France and hosted notable figures throughout history. Today, it is a country house hotel and spa, offering guests a unique blend of historical charm and modern comfort, set in beautiful 90 acres of landscaped gardens and parkland.

How are you approaching the issue of sustainability?
Sustainability is a core focus at Hartwell House & Spa. We are committed to reducing our carbon footprint through energy-efficient practices, sourcing local and sustainable products, and implementing waste reduction strategies. Our goal is to preserve the beauty of our environment for future generations while maintaining the high standards our guests expect.
How do you approach creating your menus and sourcing food and drink suppliers?
Our menus are crafted with a focus on seasonal, local and estate grown ingredients, celebrating the best of British produce. We work closely with local farmers and suppliers to ensure freshness and sustainability. This approach not only supports the local economy but also provides our guests with the highest quality dining experience.
